Yacón (Smallanthus sonchifolius, syn .: Polymnia edulis, P. sonchifolia) is a daisy plant (Asteracea). It comes from the Peruvian plateaus and has been one of the most valuable foods there for centuries. Other names are: aricoma, arboloco, aricona, arikuma, colla, chiriguano, ipio, jacón, jicama, jiquima, jikima, jiquimilla, leafcup, llacon, llacoma, mexican potato, polaco, poire de terre, potato bean, puhe, shicama, taraca, yacuma, yacumpi.
Yacon raw syrup - the ideal low carb sweetener
The high fructose content of the yacon root (dried on average 75%) makes yacón ideal for a low-calorie intake of carbohydrates with a low blood sugar concentration. You can avoid excess sugar or hypoglycemia like table sugar, because the carbohydrates in yacon raw syrup are primarily inulin or fructooligosaccharides (FOS), which are not metabolized by the body. This way, with the same sweetness, you get fewer calories than with ordinary sugar and keep your blood sugar level low. FOS are also prebiotics, which is why Yacón has a beneficial effect on the intestinal flora.
